Chocolatey and crunchy, a decadent snack that you can feel good about. These brownies are Paleo friendly – gluten free (no grains, flours) or dairy!
Instructions
Preheat oven to 350°F. Grease or line an 8 inch square baking dish.
Add cashew butter, eggs, and sugar to a bowl and beat until smooth. To the same bowl, add almond or vanilla extract, baking powder, salt, and shredded coconut. Stir to combine.
Pour mixture into your baking dish. Top with chunks of chocolate and a sprinkle of coconut flakes.
Bake for approximately 30 minutes (check at 25 minutes, depending on your oven may be a bit shorter or longer).
Let cool, then slice into 9 squares.

1 cup cashew butter
2 large eggs
1/2 cup coconut sugar
1 tbsp almond or vanilla extract
1/2 teaspoon baking powder
1/8 teaspoon salt
1/4 cup unsweetened shredded coconut
50 g dark chocolate chunks (I used half of a 72% bar)
Coconut flakes to sprinkle over top
