One of my favorite simple and wholesome, sweet, but not too sweet, treats. No refined sugars or adulterated fats here, just natural, whole foods that you can feel good about eating and sharing with friends and family.
Instructions
1. Add oats to a food processor and pulse until finely ground. Add in dates and continue pulsing until crumbly. Add in peanut butter and pulse until a dough forms.
2. Scoop 2 tablespoon size chunks of dough and form into balls. Flatten and shape into rounds.
3. Melt chocolate over a double boiler or in the microwave.
4. Dip half of each cookie into the chocolate and place on a parchment lined tray.
5. Set in refrigerator or freezer for 30 minutes to set.

1 cup medjool dates, pitted
1/2 cup peanut butter
Pinch of salt
1 ounce dark chocolate (85%), melted
