This is a really nice fresh, light, yet hearty summer salad, a snap to throw together on short notice and also easy to prepare ahead for parties and BBQ’s. A nice vegetarian alternative to traditional chicken salad.
Instructions
Remove tofu from container and squeeze out water with a clean kitchen towel or paper towels. Cut into bite-sized cubes.
Heat oil in a skillet over medium heat. Add in cubed tofu. Stir-fry until golden brown, about 5 minutes. Sprinkle with salt and pepper.
Add cooked tofu to a medium bowl. Add in celery, apple, cashews, onion, and cilantro. Toss to combine.
To the same bowl, add in mayo, apple cider vinegar, honey, and all the spices. Toss well to combine.
Taste and add salt and pepper as desired.
Serve as a sandwich with your favorite bread or over a bed of greens for a hearty salad.

1 tablespoon avocado or olive oil
1/4 teaspoon salt
Dash of pepper
1/2 cup celery, thinly sliced
1/2 cup apple, diced
1/4 cup cashews, chopped
1/4 cup red onion, finely sliced
1/4 cup cilantro, chopped
6 tablespoons mayonnaise
2 tablespoons apple cider vinegar
1 tablespoons honey
2 teaspoons cumin
1/2 teaspoons garlic powder
1/4 teaspoons cayenne pepper
1/4 teaspoons paprika
