Instructions
Boil 4 eggs until medium to hard cooked (approximately 9 minutes). In the meantime, chop your olives, onion, sundried tomatoes, pistachios and basil. Set aside.
Peel the eggs and mash with a fork until no large pieces remain. Add in your mayonnaise and evoo and mix to combine. Add in your olives, onion, sundried tomatoes, and cucumber. Toss together lightly and season with black pepper. Top with your pistachios, basil, squeeze of lemon, and drizzle of evoo. Enjoy!

1 tablespoon mayonnaise (we used an olive oil based one)
1 tablespoon extra virgin olive oil
3 tablespoons green olives, chopped finely
3 tablespoons onion, chopped finely
3 tablespoons sundried tomatoes in olive oil, chopped finely
3 tablespoons cucumber, chopped small
Black pepper, to taste
1 tablespoon pistachios, chopped roughly
1 tablespoon basil, sliced thinly
Squeeze of lemon
Drizzle evoo
