I first made this in July when I was up to my ears in zucchini from our CSA share! I had frozen so much of it for smoothies but still had a ton left. This recipe is so easy and comes together without a lot of effort or time. Because who has time! It also stores well in the fridge – if there’s any left to save for later – and could even be frozen and re-heated in the oven for another day. I topped mine with wild caught smoked sockeye salmon for a well rounded meal but it would be equally delicious with a poached or fried egg on top. Yumm!
