When you need a grab ‘n go, nutrient dense, and satisfying breakfast, these cookies are a real life saver! Perfect for those busy work day mornings and for the kiddos.
Instructions
Preheat oven to 350°F and prep a baking sheet with parchment.
Place half of the oats and half of the flax seeds into a food processor. Pulse until you get a coarse flour.
Place flour into a large bowl and stir in the remaining oats, flax, raisins, chia, sunflower, cinnamon, baking soda, and salt.
In a food processor, blend dates, coconut oil, and milk until you get a paste. Add this to the flour mixture and combine well. Hands work best here.
Make balls with the dough, about 4 tablespoons each. Press down and flatten to get a thick cookie.
Bake for 12-15 minutes. Remove and let cool completely so they don’t fall apart.
